Spiced up Machaca
- 2 Tbs cooking oil
- 1/2 cup finely diced white onion
- 2 cups left over shredded beef that has been cooked in our Amalia's Cocina Chili Colorado sauce (recipe is under Chili Colorado)
- 6 large eggs, scrambled
- Sour cream*
- Tortilla Chips*
- Mexican blend cheese*
In large skillet add the oil and onion. Saute over medium high heat for one minute. Add beef, mix thoroughly until heated through. Add eggs and let set for one minute before continually stirring. When eggs are just set, dived among four plates, top with *shredded cheese, sour cream and crushed tortilla chips!
Traditional Machaca is made with shredded beef and eggs, we've spiced it up using left over meat from our Chili Colorado recipe. We think you'll love the heat!
