Chili Colorado Cheese Fries


  • 4 medium baking potatoes
  • 1 tablespoon canola oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup Chili Colorado sauce
  • 2 cups Mexican blend cheese
  • 1/2 cup yellow onion, diced (optional)

Cut each potato into 12 wedges; place in a large bowl. Add the remaining ingredients; toss to coat. Arrange in a single layer in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake at 425 degrees F for 20 minutes. Turn; bake 25 minutes longer remove from oven, pour sauce over and sprinkle with cheese and onion, return to oven for 5 more minutes until potatoes are cooked through.

These are great with sour cream too!
