Amalia's Cocina Breakfast Machaca
Using leftover Chili Colorado meat from our Chili Colorado recipe:
Ingredients
In large non-stick skillet set on medium, add oil and onion. Let onion soften, about 1 minute. Add meat (it is better if it has been in the refrigerator and is cold) and cook until heated through. In mixing bowl, scramble eggs and add to pan. Cook, stirring occasionally so not to stick to pan. Once eggs have set and are cooked through, stir in cheese, just to melt. Serve in warm tortillas immediately.
Don’t forget to add your favorite Mexican condiments to this one! Salsa, sour cream, guacamole….

- 1 cup cooked chili colorado meat (See Chili Colorado recipe)
- 1 Tablespoon yellow onion
- 4 large eggs
- 1/2 cup Monterey Jack Cheese
